Pasta with Spinach Cream sauce

 
 

Not everybody loves spinach but I do. And this pasta with spinach cream sauce became easily one of my favorites!

Ingredients
  1. Shallot 1
  2. Butter 1 tbsp
  3. Spinach 500g (1lb) (fresh)
  4. Cream 50-100 ml (1/3 cup)
  5. Parmesan cheese
  6. Salt, Pepper
Instructions
  1. Finely chop the shallot and fry slightly in a large pan with butter until it starts to brown. Add the spinach and cover with the lid to make them release their water.
  2. Cook for 5-10 minutes, until all the leaves become dark green and decrease (a lot) in volume. Season with salt and pepper.
  3. Remove from heat and transfer everything in a blender. Blend until it becomes smooth, then add the cream and adjust the thickness with the pasta water.
  4. Boil the pasta in salted water and drain when it is al dente.  Sauté the pasta with the spinach sauce in the same pan you used earlier to blend the flavours.
  5. Plate the pasta and finish with freshly grated Parmesan cheese.
