Scallops au Gratin

This is a perfect appetizer for a nice dinner with friends or a romantic date. 
A great starter for any fish menu.
They are really easy to make but they will stun your guests for the bold (but yet still delicate) flavour.

Ingredients
  1. 4 Scallops in shell
  2. 4 tbsp Breadcrumbs
  3. 1 tbsp Parsley
  4. 1 tbsp Parmesan cheese
  5. 2 cloves of garlic
  6. Salt, Pepper, EVO Oil
  7. Fish Broth
Instructions
  1. Mix the breadcrumbs, chopped parsley, grated Parmesan and minced garlic in a bowl.
  2. Add salt and black pepper to season and add enough fish broth to get a smooth dense cream (not too liquid).
  3. With a tablespoon, cover the scallops with this mixture and finish with a sprinkle of EVO Oil.
  4. Bake in pre-heated oven at 200°C (400°F) for 10-15 minutes, until they get a nice golden brown crust.
