They are really easy to make but they will stun your guests for the bold (but yet still delicate) flavour.

- 4 Scallops in shell
- 4 tbsp Breadcrumbs
- 1 tbsp Parsley
- 1 tbsp Parmesan cheese
- 2 cloves of garlic
- Salt, Pepper, EVO Oil
- Fish BrothInstructions
- Mix the breadcrumbs, chopped parsley, grated Parmesan and minced garlic in a bowl.
- Add salt and black pepper to season and add enough fish broth to get a smooth dense cream (not too liquid).
- With a tablespoon, cover the scallops with this mixture and finish with a sprinkle of EVO Oil.
