Creamy Pesto Gnocchi

Homemade soft and pillowy potato gnocchi, with a delicious creamy basil pesto sauce made from scratch. A perfect homemade dinner.

Boil the potatoes and mash them with a potato ricer. Add the flour and salt and knead into a smooth dough.

Roll the dough on a board and cut it into half inch chunks. Roll the gnocchi on a fork or gnocchi board to make the striped texture.

Add all the pesto dry ingredients in a food processor and pulse until finely minced.

Add the olive oil a bit at a time and pulse until you get a creamy consistency. Then add the creamy and mix well.

Boil the gnocchi and scoop as soon as they float, then dress them with the freshly made pesto and serve.
