A creamy avocado sauce that coats perfectly any pasta shape, with the addition of the sweetness and acidity of cherry tomatoes which give another level of flavor to this dish.
Bring to boil a large pot of salted water, then toss the pasta and cook according to the packaging instructions.
Meanwhile, add the avocado, sour cream, olive oil, salt and pepper in a blender and blend until smooth and creamy. Add a little bit of water if it's too dense.
When the pasta is cooked, drain it and add it to the sauce. Serve immediately with the chopped tomatoes and freshly grated cheese on top.
