This Air Fryer Butternut Squash recipe has all the deliciousness of roasted butternut squash in half the time! Whether you're preparing a wholesome meal or need a tasty addition to salads and bowls, this air fried butternut squash is the answer.
Slice the butternut squash into ½ inch slices. You don't need to peel the squash, but you can choose to do so if you prefer. You can also chop the butternut squash into cubes.
In a bowl, mix all the spices.
Brush lightly the squash slices with olive oil, then sprinkle salt and the spice mix on box sides of the slices. If you chopped the squash, toss it with olive oil and the spices in a bowl.
Arrange the slices in a single layer in the air fryer basket if possible, or overlap the slices to save time.
Cook at 325°F / 160°C for 20-25 minutes, flipping the slices halfway through the cook.
Notes
Once your butternut squash has cooled, store any leftovers in an airtight container in the fridge for up to 3-4 days. Reheating is easy – simply pop the squash back into the air fryer for 2-3 minutes to regain its crispy texture. Alternatively, you can reheat it in the oven at 375°F (190°C) for about 5-7 minutes.
