Instructions
Cut the zucchini into even sticks and pat them dry with paper towels to remove excess moisture.
In a bowl, beat the egg. In another shallow bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
Dip each zucchini stick into the egg, then coat evenly in the breadcrumb mixture.
Place the coated zucchini in a single layer in the air fryer basket. (Do multiple batches if necessary)
Lightly spray or drizzle with olive oil.
Air fry at 200°C (400°F) for 10–12 minutes, turning halfway through, until golden and crispy.
Serve immediately with your favorite dipping sauce.
Notes
Cut the zucchini evenly for consistent cooking
Don’t overcrowd the air fryer basket
Use a light oil spray for best crisping
