These Caramelized Onion Goat Cheese Crostini are rich, savory, and the perfect bite-sized appetizer. The combination of sweet, golden onions and creamy, tangy goat cheese on a crispy toasted baguette makes each piece irresistibly flavorful.
Arrange baguette slices on a baking sheet. Brush both sides lightly with olive oil. Bake for 8–10 minutes, flipping halfway through, until golden and crisp. Set aside to cool slightly.
Heat olive oil and butter in a large skillet over low heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 30–35 minutes, until onions are deeply golden and soft. Remove from heat and let cool slightly.
Spread a generous layer of goat cheese onto each toasted baguette slice. Top with a spoonful of the warm mushrooms.
Sprinkle with freshly ground black pepper and garnish with fresh thyme or chives, if desired. Serve immediately.
