Instructions
Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve about ½ cup of pasta water before draining.
In a bowl, add the cream cheese, the lemon zest, lemon juice, salt and pepper to taste.
Drain the pasta, then add it to the bowl with a splash of pasta water, stirring until it melts into a smooth sauce and toss to coat evenly.
Stir in Parmesan cheese and additional pasta water as needed to create a silky consistency.
Serve immediately with extra Parmesan and black pepper if desired.
Notes
Always reserve some pasta water to adjust the creaminess of the sauce.
Taste the lemon cream and adjust the lemon juice, salt, and pepper to taste.
Mix the pasta and sauce off heat to keep the sauce smooth.
