Preheat the oven to 400 °F (200 °C). Use the convection function for better results. Static also works.
Cut the zucchini into thick rounds about ½ inch (1-1,5 cm) thick and pat them dry.
Arrange the zucchini slices on a baking rack and brush lightly with olive oil. Season with a pinch of salt and pepper.
Bake the zucchini for 15 minutes, then remove from the oven.
In a small bowl, season your tomato passata with a drizzle of olive oil, salt, and pepper. Spoon a small amount of tomato sauce onto each zucchini slice.
Top with mozzarella and basil, then bake for another 5-10 minutes until the cheese is melted and lightly golden.
Serve immediately while still warm.
Notes
Add a baking sheet below the baking rack to catch any drippings. Alternatively, you can also bake the zucchini pizza bites on a lined baking sheet.
Slice the zucchini evenly for consistent cooking.
Use a thick sauce to avoid sogginess. If your passata is too watery, you can reduce it slightly on the stove at low heat for 10-15 minutes.
