Ingredients
For the Salad:

Chickpeas
400g / 15 oz, drained and rinsed

Cucumber
diced

Red Onion
thinly sliced

Cherry Tomatoes

For the Pesto Dressing:

Basil Pesto
store-bought or homemade

Instructions
In a large bowl, combine the chickpeas, diced cucumber, sliced red onion, cherry tomatoes, and crumbled feta.
In a small bowl or jar, whisk together the basil pesto, olive oil, lemon juice (if using), salt, and pepper until smooth.
Pour the dressing over the salad and toss gently until all ingredients are well coated.
Taste and adjust seasoning if needed, then serve immediately or chill for 20–30 minutes to let flavors meld.
Notes
Soak red onion in cold water for 5–10 minutes before adding if you prefer a milder flavor.
Use high-quality pesto for the best taste, or make your own at home with fresh basil.
