Pasta e Piselli is a delicious Italian dish made in one pot and less than 20 minutes with pasta and a creamy pea sauce. It's a comforting and easy-to-make meal that's a perfect weeknight meal for the whole family.
In a large skillet on medium-high heat, drizzle the olive oil and add the diced onion. Sautè for a few minutes until it starts to turn golden.
Add the frozen peas to the skillet and cover with water or vegetable stock. Cook for about 5 minutes.
Remove half of the peas and blend into a smooth sauce (add some water to make it smoother). Return the cream to the skillet.
Add the pasta in the pan with the peas and bring to a simmer. Turn the heat to medium-low and simmer until the pasta is fully cooked al dente. Keep stirring to prevent the pasta from sticking to the bottom of the pan and add some more water or stock when it reduces.
Turn off the heat and add the grated Pecorino or Parmesan cheese to the pan. Mix well and serve immediately.
Notes
For an extra burst of flavor, sauté the onions and peas in a bit of butter along with the olive oil. This combination enhances the richness of the sauce and adds a deliciously aromatic base to your Pasta e Piselli.You can also add some heavy cream to the sauce to make it extra creamy.
