Tuna and Lime Tartare

200g (7 oz.) of fresh Tuna fillet

Zest of 1 lime

Juice of 1/2 lime

1 Spring Onion



  1. Finely dice the tuna and slice the spring onion very thin.

  2. Combine in a bowl with salt, lime zest and juice.

  3. Let marinate at least 1 hour before serving.

  4. Serve in individual glasses or on a plate pressing well in a food ring mold.

  5. Decorate with edible flowers or edible sprouts.
