Ingredients

Medium-large Tomatoes

Instructions
Slice the tomatoes and place them in a bowl or serving dish.
Thinly slice the onion and add it to the tomatoes.
In a small bowl, combine the olive oil, vinegar, minced or thinly sliced garlic, oregano, salt, and pepper.
Mix well, then drizzle the dressing over the tomatoes and onions.
Toss gently to combine and let sit for a few minutes before serving.
Add fresh basil just before serving.
Notes
Slice onions thinly for better balance. If the onion is too sharp, soak the slices in cold water for 10-15 minutes, then drain well.
Use ripe tomatoes for the best taste. I like to use heirloom tomatoes or vine tomatoes.
Let the salad rest 15-30 minutes before serving to allow the flavors to combine.
