Italian Tomato and Onion Salad

Last updated May 7, 2026 by Jessica Montanelli

This Italian Tomato and Onion Salad is one of the simplest and most refreshing dishes you can make, especially during the summer months when tomatoes are at their peak. Juicy, ripe tomatoes are paired with thinly sliced onions and dressed with olive oil, salt, and a touch of acidity to create a salad that is bright, flavorful, and incredibly satisfying.

Despite its simplicity, this tomato salad is a staple of Italian cooking, and it shows how high-quality ingredients can shine without unnecessary complexity. The sweetness of the tomatoes, the slight sharpness of the onions, and the richness of good olive oil come together to create a perfectly balanced side dish.

You can often find this tomato and onion salad on Italian tables during warm weather, served alongside grilled meats, fresh bread, or other light dishes.

🧾 Ingredients

ingredients to make tomato onion salad.
  • Tomatoes - Use ripe, in-season tomatoes for the best flavor. Vine-ripened, heirloom, or Roma tomatoes all work well, as long as they are juicy and sweet. Check out this Ultimate Guide to Italian Tomato Variaties (and how to use them) for more details.
  • Onion - Red onion is commonly used because it is milder and slightly sweet. Slice it very thinly so it blends well with the tomatoes.
  • Extra Virgin Olive Oil - A good-quality olive oil is essential, as it is one of the main flavors in the dish.
  • Salt & Black Pepper - Salt helps draw out the natural juices of the tomatoes, creating a light dressing.
  • Vinegar - Adds brightness and enhances the overall flavor without overpowering the tomatoes. Use red wine vinegar (mostly used in Tuscany) for a sharper taste, or white wine vinegar for a milder flavor.
  • Garlic - Garlic adds a pungent kick to the salad. You can either mince it or thinly slice it. You can also skip for a milder version.
  • Fresh Basil and Oregano - Both basil and oregano are essential in this tomato salad because they pair so well with tomatoes. I prefer to use fresh basil and dried oregano.

See the recipe card for quantities.

🍳 Substitutions

  • Red Onion → White Onion or Shallots: White onion is sweeter than red onion while shallots are milder.
  • Vinegar → Lemon Juice: Both work well depending on your preference.
  • Tomatoes → Cherry Tomatoes: Halved cherry tomatoes make the salad easier to serve and slightly sweeter.

🥣 Variations

  • Caprese Style - Add fresh mozzarella for a more substantial dish. Check out also this Caprese Salad with Grilled Eggplant.
  • With Cucumbers - Adds extra crunch and freshness.
  • Mediterranean Version - Add olives or capers for a briny contrast.
  • Spicy Version - Add a pinch of chili flakes for a subtle heat.

🍽 Serving Suggestions

Serve this Italian tomato and onion salad at room temperature for the best flavor. It works beautifully as a side dish for grilled meats, fish, or roasted vegetables.

It pairs well with:

  • Crusty bread or focaccia
  • Simple pasta dishes like this Trenette al Pesto (with Green Beans and Potatoes)
  • Grilled chicken or steak

It's also perfect as part of an antipasto spread or a light summer meal.

❄️ Storage & Reheating

Fridge: Store in an airtight container for up to 1 day. Tomatoes release liquid over time and lose flavor in the fridge, so it's best enjoyed fresh.

Make Ahead: It's recommended to prepare it slightly ahead of time and let it marinate for at least 15 minutes (and up to 2-3 hours) before serving.

Freezer: Not suitable for freezing.

💭 Recipe FAQs

Can I make tomato onion salad ahead of time?

Yes, but it's best kept at room temperature or for a short time in the fridge and eaten within a few hours for the freshest texture.

How do I reduce the sharpness of the onion?

Soak sliced onion in cold water for 10 minutes, then drain before adding to the salad.

Should I refrigerate it before serving?

It's best served at room temperature for full flavor.

⭐ Top tip

After adding salt, let the tomatoes sit for about 15 minutes before serving. This draws out their natural juices and creates a light, flavorful dressing without needing extra ingredients.

Notes

  • Slice onions thinly for better balance. If the onion is too sharp, soak the slices in cold water for 10-15 minutes, then drain well.
  • Use ripe tomatoes for the best taste. I like to use heirloom tomatoes or vine tomatoes.
  • Let the salad rest 15-30 minutes before serving to allow the flavors to combine.
