Quiche is a classic dish that can be enjoyed for breakfast, lunch, or dinner. This Italian-inspired version takes it to the next level by using creamy Provolone cheese, tender potatoes, and flavorful ham (prosciutto cotto).

The puff pastry crust provides a buttery, flaky base that contrasts beautifully with the soft, cheesy filling. It's quick to prepare, making it ideal for busy weeknights, brunch gatherings, or meal prep.

Potatoes and Provola are a classic combo inspired by this Pasta e Patate (Pasta and Potatoes with Provola cheese).

🧾 Ingredients

  • Puff Pastry - A store-bought puff pastry sheet saves time and creates a light, flaky crust that complements the creamy filling.
  • Potatoes - Use waxy potatoes like Yukon Gold or red potatoes, as they hold their shape well when baked.
  • Provola Cheese - Smoked or regular Provolone or Provola adds a creamy, slightly tangy flavor. If unavailable, you can substitute with Taleggio or Mozzarella.
  • Ham - Choose high-quality deli ham or cooked ham cubes for a savory, slightly salty addition.
  • Eggs - Eggs bind the filling and create a fluffy, custard-like texture.
  • Cream - Heavy cream provides richness, but you can use half-and-half or whole milk for a lighter version.
  • Parmesan Cheese - Grated Parmesan enhances the umami flavor and adds a slight nutty taste.
  • Black Pepper - Freshly ground black pepper balances the creaminess with a subtle spicy note.
  • Garlic Powder - Adds depth and enhances the overall flavor.
  • Onion Powder - Gives a mild, sweet onion taste without the need for fresh onions.

See the recipe card for quantities.

🍳 Substitutions

  • Puff Pastry: If unavailable, use a store-bought or homemade pie crust. Or make a quiche crust like in this Italian Sausage & Broccoli Quiche.
  • Potatoes: Swap with sweet potatoes for a slightly sweeter version, like this Sweet Potato and Goat Cheese Quiche.
  • Provolone Cheese: Mozzarella, Fontina, or Taleggio can be used instead.
  • Ham: Substitute with cooked bacon, pancetta, or turkey for a different twist.
  • Heavy Cream: Use half-and-half, whole milk, or a dairy-free alternative like coconut cream.
  • Parmesan Cheese: Pecorino Romano is a great alternative with a sharper flavor.

🥣 Variations

  • Vegetarian Option: Replace the ham with sautéed spinach, mushrooms, or roasted bell peppers.
  • Spicy Kick: Add red pepper flakes or diced jalapeños for some heat.
  • Herb-Infused: Mix in fresh herbs like basil, thyme, or chives for extra aroma.
  • Cheesy Delight: Mix in different cheeses like Gruyère or Ricotta for a unique texture.
  • Mini Quiches: Use muffin tins to create individual servings perfect for meal prep or parties.

🍽 Serving Suggestions

This quiche pairs beautifully with a fresh side salad dressed with balsamic vinaigrette or a bowl of tomato soup for a cozy meal. For breakfast or brunch, serve it alongside fresh fruit and a cup of espresso. It's also great as a light dinner with a glass of white wine.

🔪 Equipment

  • Baking dish or pie pan - A 9-inch round pan works best. But if you have rectangular puff pastry like I did, you can use a casserole dish.
  • Rolling pin (if needed) - For rolling out the puff pastry slightly to fit your pan.
  • Mixing bowls - For whisking the eggs and combining ingredients.
  • Whisk or fork - To blend the eggs, cream, and seasonings.

❄️ Storage & Reheating

Refrigeration: Store leftover quiche in an airtight container in the fridge for up to 3 days. Reheat slices in the oven at 350°F (175°C) for about 10 minutes to maintain the crispness of the crust. Alternatively, use a microwave for a quick warm-up, though the pastry may soften.

Freezing: To freeze, wrap individual slices tightly in plastic wrap and place them in a freezer-safe bag. Store for up to 2 months. To reheat, bake frozen slices at 375°F (190°C) for about 20 minutes or until heated through.

💭 Recipe FAQs

Can I make this quiche ahead of time?

Yes! You can assemble the quiche a day in advance, store it in the fridge, and bake it fresh when ready.

How can I make sure the puff pastry cooks evenly on the bottom?

Bake the quiche in the middle-lower rack in the over, to make sure the pastry on the bottom bakes fully.

Can I use frozen puff pastry?

Absolutely! Just ensure it's thawed according to package instructions before using.

⭐ Top tip

For an extra crispy bottom crust, place the baking dish on a preheated baking sheet in the middle-lower rack in the oven. This helps the pastry cook evenly and prevents sogginess.
