Ingredients
 
 

  • 1 French Baguette, sliced into 20 thin diagonal pieces
  • 2-3 tablespoon Extra Virgin Olive Oil, for brushing
  • 5 oz Goat Cheese, softened to room temperature
  • 2 tablespoon Honey, acacia is best
  • 1 tablespoon Thyme leaves, fresh or 1 teaspoon dried

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Arrange baguette slices in a single layer on the baking sheet. Brush the tops lightly with olive oil.
  3. Toast in the oven for 8-10 minutes, flipping halfway through, until golden and crisp. Remove and let cool slightly.
  4. Spread goat cheese on each toasted baguette slice. Use the back of a spoon or a butter knife for even spreading.
  5. Drizzle the honey on top of each slice, without exaggerating. You don't want to overpower the goat cheese savoriness.
  6. Sprinkle the thyme leaves on top.
  7. Serve immediately at room temperature or slightly warm.
