Ingredients
 
 

  • 1 Baguette, sliced into ½-inch rounds (about 16 slices)
  • 2 tablespoon Olive Oil
  • 4 oz Goat Cheese
  • 2 large Onions, yellow, red, or shallots
  • 2 cloves Garlic , halved
  • 1 teaspoon Thyme , fresh, or ½ teaspoon dried thyme
  • 1 tablespoon Butter, optional
  • Salt and black pepper, to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Arrange baguette slices on a baking sheet. Brush both sides lightly with olive oil. Bake for 8-10 minutes, flipping halfway through, until golden and crisp. Set aside to cool slightly.
  3. Heat olive oil and butter in a large skillet over low heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 30-35 minutes, until onions are deeply golden and soft. Remove from heat and let cool slightly.
  4. Spread a generous layer of goat cheese onto each toasted baguette slice. Top with a spoonful of the warm mushrooms.
  5. Sprinkle with freshly ground black pepper and garnish with fresh thyme or chives, if desired. Serve immediately.
