Ingredients
 
 

  • 11 oz Short Pasta, (Fusilli or Penne)
  • 1 cup Marinated Artichoke Hearts, about 5-6, chopped or thinly sliced
  • 4 oz Cooked Ham, diced
  • 5 oz Mozzarelline
  • ¼ cup Parmesan cheese, shaved
  • 3 tablespoon Olive Oil
  • Salt & Black Pepper, to taste
  • Fresh Parsley or Basil, optional

Method
 

  1. Cook the pasta in salted boiling water until al dente, then drain and rinse under cold water to cool completely.
  2. Transfer the pasta to a large bowl.
  3. Add the artichokes, diced ham, and mozzarelline.
  4. Drizzle with olive oil and toss gently to combine.
  5. Season with salt and black pepper to taste.
  6. Add minced parsley and basil if using, and mix lightly.
  7. Finish with shaved Parmesan just before serving.

Notes
