🍕 What Makes This Pizza Dough Work Quickly

Traditional Italian pizza dough often ferments for 12-48 hours. While that creates incredible flavor, it's not always practical. This 2-hour pizza dough uses:

  • The right hydration level for softness
  • Instant yeast for reliable, quick rise
  • Proper resting time to relax the gluten

These elements allow you to shape the dough easily - especially important when forming a heart shape - without tearing or springing back.

  • Instant Yeast - Ensures a fast, even rise without proofing.
  • Warm Water - Activates the yeast and hydrates the dough properly.
  • Extra Virgin Olive Oil - Adds flavor and elasticity.
  • Fine Sea Salt - Enhances flavor without overpowering the dough.
  • Tomato Passata - Choose a smooth, high-quality Italian passata for the best sauce. I recommend using this No-cook San Marzano Pizza Sauce recipe.
  • Fresh Mozzarella - Fior di latte or low-moisture mozzarella melts best.
  • Fresh Basil - Added after baking for aroma and freshness.

🥣 Substitutions & Variations

  • Whole Wheat - Replace up to 30% of the flour with whole wheat flour.
  • Gluten-Free - Use a trusted gluten-free pizza dough mix, like this Caputo Gluten-Free Flour.
  • Vegan - Use dairy-free mozzarella and skip cheese or add roasted veggies.
  • Toppings - Prosciutto, burrata, mushrooms, olives, or cherry tomatoes all work perfectly.

❤️ How to Make Pizza Hearts (Easy Method)

You don't need special tools or molds to shape pizza dough into a heart. This method works beautifully and keeps the pizza rustic, just like traditional Italian pizzas:

Step 1. Add all the dough ingredients into a bowl and mix well.

Step 2. Knead into a soft dough and let it rise 1-1 ½ hours.

Step 3. Split the dough into 2 or 3 and streatch to shape into hearts. Add a bit of olive oil to the surface.

🔪 Equipment

You don't need professional tools to make great homemade pizza, but the right equipment makes a noticeable difference - especially when baking at high temperatures.

  • Pizza Stone or Pizza Steel: A pizza stone or steel (or alternatively a heavy baking sheet) helps recreate the intense heat of a pizza oven, giving you a crisp base and evenly baked crust. Preheat it in the oven for at least 30 minutes before baking for the best results.
  • Mixing Bowl with lids: For mixing and proofing the dough comfortably without sticking.
  • Bench Scraper: Helpful for handling the dough gently and keeping your work surface clean.
  • Pizza Cutter: For clean slices once the pizza comes out of the oven.

Using a preheated stone or heavy baking sheet is one of the most important steps for achieving a crisp bottom while keeping the inside soft and airy - something I always recommend when baking pizza at home.

❄️ Storage & Reheating

Fridge:
Store leftovers in an airtight container for up to 2 days.

Reheating:

You can freeze the baked pizza slices for up to 1 month.

💭 Recipe FAQs

Does the heart shape hold while baking?

Absolutely. As long as you don't overload the toppings, the shape stays intact. If you're worried of transferring the pizza to the oven, you can take out the tray or stone, and shape the pizza directly on top.

Can I prepare the dough in advance?

Yes, you can refrigerate the dough after the first rise for up to 24 hours. Allow to rest at room temperature at least 30 minutes before shaping.

What oven temperature is best?

Bake as hot as possible - ideally 475-500°F (245-260°C) - for best results. It also works best if you heat the baking sheet or pizza stone before transferring the pizza.

⭐ Top tip

Less sauce is better. A thin layer of tomato sauce keeps the pizza light, prevents sogginess, and helps the heart shape stay defined during baking.

Ingredients
 
 

For the Pizza Crust
  • 2 cups 00 Flour, plus more for dusting the counter
  • ½ packet Instant Yeast, about 1 teaspoon
  • ¾ cups Warm Water
  • 1 teaspoon Salt
  • ½ teaspoon Dried Basil, optional
  • 1 tablespoon Extra-Virgin Olive Oil, plus more to coat
For the Toppings
  • 1 cup Pizza Sauce
  • 2 cups Mozzarella Cheese, shredded or sliced
  • Pepperoni, cut into hearts (optional)

  • Pizza Stone

Method
 

  1. In a large bowl, add in the flour, salt, dried basil, yeast and olive oil. Mix with a spoon, then add the water and and then knead gently to form a ball of dough.
  2. Coat the top of the dough ball with an additional drizzle of olive oil. Cover the bowl loosely with plastic wrap or a lid, and allow to rise in a warm place until double in size - about 1 hour to 90 minutes.
  3. Once ready to assemble, preheat the oven to 475-500°F (245-260°C). Add the baking sheet or pizza stone in to warm up as well.
  4. Coat the counter with a thin layer of flour. Divide the dough in half or thirds, if desired. Roll gently and use your hands to shape the dough until it is about half an inch in thickness.
  5. Gently pinch the bottom to form the point of the heart. Use your fingers to create a small indentation at the top center.
  6. Using a pastry brush, spread additional olive oil over the very edges of the pizza.
  7. Spread a layer of pizza sauce over each pizza.
  8. If desired, use a 1-inch size heart shaped cookie cutter to cut the pepperoni into hearts for an added effect. Add the mozzarella and the pepperoni on the pizza(s).
  9. Bake the pizzas in the preheated oven for 10-14 minutes. Bake until the edges are golden and the cheese in the center has melted. Allow to cool slightly before cutting and serving.
