This easy no-bake dessert looks impressive but takes very little effort to prepare. The ricotta is whipped until smooth and airy, lightly sweetened with honey, and brightened with lemon zest and vanilla. Combined with juicy strawberries and the slight crunch of Amaretti cookies, every spoonful has the perfect balance of texture and flavor.

This dessert is especially popular during spring and summer (perfect for kids too), when strawberries are at their sweetest and you want something refreshing but still satisfying.

🧾 Ingredients

ingredients to make strawberry ricotta parfaits.
  • Ricotta Cheese - Use high-quality whole milk ricotta for the best creamy texture. If your ricotta is very wet, drain it slightly to avoid a watery cream.
  • Honey - Adds natural sweetness and blends smoothly into the ricotta. You can adjust the amount based on your taste.
  • Vanilla Extract - Enhances the flavor of the cream and adds warmth without overpowering the other ingredients. You can also use vanilla powder or vanilla paste.
  • Lemon Zest - Brightens the dessert and balances the richness of the ricotta.
  • Greek Yogurt (optional) - Adds a slight tang and makes the cream even lighter. It's optional but recommended if you prefer a fresher taste.
  • Strawberries - Use ripe, sweet strawberries for the best flavor. Slice them just before assembling for freshness.
  • Amaretti Cookies - Provide crunch and a subtle almond flavor that complements both ricotta and strawberries.

See the recipe card for quantities.

🍳 Substitutions

  • Ricotta → Mascarpone (or cream cheese): For a richer, tangier and more indulgent cream.
  • Honey → Powdered Sugar or Maple Syrup: Adjust sweetness depending on your preference.
  • Strawberries → Mixed Berries: Raspberries, blueberries, or peaches work beautifully.
  • Amaretti → Biscotti or Granola: For a different texture or if amaretti are not available.
  • Greek Yogurt → Whipped Cream: For a softer, more dessert-like texture.

🥣 Variations

  • Chocolate Version - Add chocolate shavings or a drizzle of melted dark chocolate between the layers.
  • Citrus Parfait - Add orange zest along with lemon for a more complex flavor.
  • Layered Trifle Style - Assemble in a larger dish for a family-style dessert.
  • Crunchy Nut Version - Add toasted almonds or pistachios for extra texture.
  • Breakfast Parfait - Use less sweetener and more yogurt for a lighter, breakfast-friendly option.

🍽 Serving Suggestions

Serve this whipped ricotta and strawberry parfait in clear glasses, like a stemless wine glass or jars, to highlight the beautiful layers. It works perfectly as an elegant dessert for dinner parties, but it's also simple enough for a quick weekday treat.

For an extra touch, drizzle a little honey on top and add a few crushed amaretti just before serving. It pairs beautifully with espresso, cappuccino, or even a glass of sparkling wine.

❄️ Storage & Reheating

Fridge: Store assembled parfaits in the refrigerator for up to 1 day, though they are best enjoyed fresh.

Make Ahead: Prepare the ricotta cream in advance and assemble just before serving to keep the amaretti crunchy.

Freezer: Not recommended, as the texture will change.

💭 Recipe FAQs

Can I make these parfaits ahead of time?

Yes, but it's best to assemble it shortly before serving so the cookies don't become too soft.

Do I need to strain ricotta?

If your ricotta is watery, draining it for 10-15 minutes will improve the texture.

Can I skip the amaretti?

Yes, but they add an important crunchy element. You can replace them with biscotti or nuts.

⭐ Top tip

Whip the ricotta for a few minutes until it becomes smooth and airy. This step makes a big difference and transforms it from slightly grainy to beautifully creamy.
