Ingredients
 
 

  • 1 ½ cup Frozen Green Peas
  • 7 oz Short Pasta, Ditalini, Macaroni, Orzo, etc.
  • 1 White Onion, diced
  • ⅓ cup Pecorino Romano or Parmigiano cheese, grated
  • Extra-Virgin Olive Oil
  • Salt
  • Black Pepper
  • Water or Vegetable Stock

Method
 

  1. In a large skillet on medium-high heat, drizzle the olive oil and add the diced onion. Sautè for a few minutes until it starts to turn golden.
  2. Add the frozen peas to the skillet and cover with water or vegetable stock. Cook for about 5 minutes.
  3. Remove half of the peas and blend into a smooth sauce (add some water to make it smoother). Return the cream to the skillet.
  4. Add the pasta in the pan with the peas and bring to a simmer. Turn the heat to medium-low and simmer until the pasta is fully cooked al dente. Keep stirring to prevent the pasta from sticking to the bottom of the pan and add some more water or stock when it reduces.
  5. Turn off the heat and add the grated Pecorino or Parmesan cheese to the pan. Mix well and serve immediately.
