Ingredients
  

For the Salad:
  • 1 can Chickpeas, 400g / 15 oz, drained and rinsed
  • 1 cup Cucumber, diced
  • ½ Red Onion, thinly sliced
  • 1 cup Cherry Tomatoes, halved
  • ¼ cup Feta Cheese, crumbled
For the Pesto Dressing:
  • 2 tablespoons Basil Pesto, store-bought or homemade
  • 1 tablespoon Olive Oil, extra virgin
  • 1 teaspoon Lemon Juice, optional, for brightness
  • Salt and pepper, to taste

Method
 

  1. In a large bowl, combine the chickpeas, diced cucumber, sliced red onion, cherry tomatoes, and crumbled feta.
  2. In a small bowl or jar, whisk together the basil pesto, olive oil, lemon juice (if using), salt, and pepper until smooth.
  3. Pour the dressing over the salad and toss gently until all ingredients are well coated.
  4. Taste and adjust seasoning if needed, then serve immediately or chill for 20-30 minutes to let flavors meld.
