  • 7 oz Spaghetti
  • 3½ oz Cream Cheese
  • 1-2 tablespoon Lemon Juice
  • Zest of 1 Lemon
  • ¼ cup Parmesan Cheese
  • Salt & Black Pepper, to taste
  • Fresh Parsley or Basil, Optional

Method
 

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve about ½ cup of pasta water before draining.
  2. In a bowl, add the cream cheese, the lemon zest, lemon juice, salt and pepper to taste.
  3. Drain the pasta, then add it to the bowl with a splash of pasta water, stirring until it melts into a smooth sauce and toss to coat evenly.
  4. Stir in Parmesan cheese and additional pasta water as needed to create a silky consistency.
  5. Serve immediately with extra Parmesan and black pepper if desired.
