These Baked Brie and Prosciutto Crostini are the perfect bite-sized appetizer: crisp toasted baguette, creamy brie cheese, and thin slices of prosciutto baked until beautifully crispy. The result is a warm, melty, savory crostini that feels elegant but takes only minutes to prepare.

This baked Brie and Prosciutto Crostini recipe shines at holiday gatherings, parties, or aperitivo nights because it's simple, flavorful, and always a crowd favorite. You can keep it minimal with just bread, cheese, and prosciutto, or elevate it with a thin layer of fig jam underneath and a drizzle of honey on top for a sweet-and-salty contrast. No matter how you serve them, these crostini are guaranteed to disappear fast.

🧾 Ingredients

  • Baguette - Slice into slices on the bias so they toast nicely and stay crisp.
  • Brie Cheese - Creamy and melty; choose a mild brie for crowd-friendly flavor or a riper brie for extra richness.
  • Prosciutto - Thinly sliced prosciutto becomes wonderfully crisp in the oven. Use Prosciutto di Parma or San Daniele for the best flavor.
  • Thyme - Fresh or dried, adds a subtle aromatic touch that pairs beautifully with brie and prosciutto.
  • Optional: Fig Jam - Spread a thin layer on the crostini before adding the cheese for sweet depth.
  • Optional: Honey - Drizzle lightly after baking for the perfect sweet-and-salty finish.

See the recipe card for quantities.

🍳 Substitutions

  • Brie → Camembert, creamy goat cheese, or taleggio.
  • Prosciutto → Speck or pancetta slices (thin).
  • Thyme → Rosemary or oregano.
  • Baguette → Sourdough, ciabatta, or focaccia cut into small pieces.

🥣 Variations

  • Fig & Honey Crostini - Add fig jam before baking and drizzle honey after.
  • Garlic Crostini Base - Brush sliced bread with garlic oil for extra flavor.
  • Prosciutto Rose Petals - Twist the prosciutto into little rosettes for a decorative presentation.
  • Balsamic Drizzle - Finish with aged balsamic vinegar instead of honey.

🍽 Serving Suggestions

Serve warm right out of the oven while the cheese is soft and the prosciutto is crisp. These crostini are perfect for holiday platters, date nights, wine pairings, or as part of an Italian aperitivo spread, together with this Easy Baked Ricotta with Cherry Tomatoes and Onions or a Tuscan Tagliere (Cheese and Charcuterie Board). Pair them with a glass of Prosecco, Pinot Grigio, or a light red like Chianti.

❄️ Storage & Reheating

Fridge: Best eaten fresh, but leftovers can be stored for up to 1 day.
Reheating: Warm in the oven at 350°F (175°C) for 5-7 minutes to re-crisp the bread and melt the cheese again.
Freezer: Not recommended - the texture won't hold up well.

💭 Recipe FAQs

Do I need to remove the rind from the brie?

No - the rind is totally edible and helps the brie hold its shape as it melts.

Can I prepare them ahead of time?

You can assemble the crostini (without baking) up to 3 hours ahead and refrigerate. Bake just before serving.

What's the best prosciutto to use?

High-quality thin-sliced Prosciutto di Parma or Prosciutto San Daniele works best for flavor and crisping.

⭐ Top tip

Cut the prosciutto into small pieces or tear it gently with your hands. Smaller pieces crisp more evenly, and each bite gets just the right amount of salty, savory flavor.

OMG these crostini!! I made them for a dinner with friends and they disappeared within minutes! I added a bit of fig jam on half of them but honestly delicious even without!
