A creamy avocado sauce that coats perfectly any pasta shape, with the addition of cherry tomatoes which with their acidity and sweetness give another level of flavor to this dish. It's ready in 10 minutes and it's the perfect summer lunch!

A perfect summer dish
It literally takes 10 minutes (not counting the time the water takes to boil) to make this dish and just a few ingredients you might already have in your home.
The pasta sauce is made cold and then it's poured on the pasta outside of the heat. This way the pasta will lightly cool down and the avocado will not cook. The final dish it's a comforting warm creamy pasta.
If you prefer this dish to be colder like a pasta salad, you can drain the pasta and then keep it under running cold water until it's completely cooled down (a couple of minutes). Perfect for those super hot days!
Variations
- Spicy Avocado Pasta - Add a pinch of chili flakes or a dash of hot sauce to the blender.
- Avocado Pesto Pasta - Blend in fresh basil and pine nuts or walnuts for a herby twist.
- Protein Boost - Top with grilled shrimp, chicken, or chickpeas.

Storage

- Bring to boil a large pot of salted water, then toss the pasta and cook according to the packaging instructions.
- Meanwhile, add the avocado, sour cream, olive oil, salt and pepper in a blender and blend until smooth and creamy. Add a little bit of water if it's too dense.
