A creamy avocado sauce that coats perfectly any pasta shape, with the addition of cherry tomatoes which with their acidity and sweetness give another level of flavor to this dish. It's ready in 10 minutes and it's the perfect summer lunch!
Years ago I would have never thought of turning avocado into pasta sauce. First, because I couldn't imagine avocado in a warm dish. Second, because I didn't think that avocado and pasta would necessarily go well together. They come from 2 different continents and 2 very different cuisines.
Browsing on Pinterest a few years ago, I noticed recipes of avocado and pasta so I decided to give it a try. I didn't follow any recipes, I just went with my gut. Needless to say, it turned out so delicious that it became one of my staple summer dishes when I want to cook something fast and yummy.

A perfect summer dish
It literally takes 10 minutes (not counting the time the water takes to boil) to make this dish and just a few ingredients you might already have in your home.
The pasta sauce is made cold and then it's poured on the pasta outside of the heat. This way the pasta will lightly cool down and the avocado will not cook. The final dish it's a comforting warm creamy pasta.
If you prefer this dish to be colder, you can drain the pasta and then keep it under running cold water until it's completely cooled down (a couple of minutes). Perfect for those super hot days!
This dish is not easy to make in advance because as we all know, avocado turns brown pretty quickly. Although you could cook pasta in advance, cool it down under cold water, drizzle some olive oil to coat it so it won't stick, and then leave it in the fridge for a day. Then you can just make the sauce at the last minute before serving.

Creamy Avocado Pasta
Ingredients
- 6 oz Pasta
- ½ Avocado
- 1 tablespoon Sour Cream
- 1 tablespoon EV Olive Oil
- Salt
- Black Pepper
- 4-5 Cherry Tomatoes, chopped
- 2 tablespoon Parmigiano, or other cheese of your choice
Instructions
- Bring to boil a large pot of salted water, then toss the pasta and cook according to the packaging instructions.
- Meanwhile, add the avocado, sour cream, olive oil, salt and pepper in a blender and blend until smooth and creamy. Add a little bit of water if it's too dense.
- When the pasta is cooked, drain it and add it to the sauce. Serve immediately with the chopped tomatoes and freshly grated cheese on top.
