🦪What Is Impepata di Cozze?

Impepata di Cozze is a traditional recipe from Campania, especially Naples, where mussels are abundant and widely enjoyed. The name comes from the Italian word pepe (pepper), since the dish is generously seasoned with freshly ground black pepper.

It's one of the most iconic Italian seafood appetizers and is usually served with lemon wedges and crusty bread to soak up the flavorful cooking juices. While some versions include a splash of white wine or parsley, the most traditional Neapolitan recipe keeps it very minimal-letting the mussels and pepper shine.

Step 1. In a large pot, add olive oil, garlic, and black pepper. Cook 1 minute then add the mussels and white wine. Close the lid.

Step 2. Let the mussels steam for a few minutes until they're all fully open. Sprinkle with parsley and serve with lemon.

Impepata di Cozze is best served immediately, piping hot, with lemon wedges on the side and a big basket of crusty bread to soak up the flavorful juices. It makes a great appetizer for an Italian-style seafood dinner, or you can enjoy it as a light main dish with a simple salad or pasta on the side. Pair it with a crisp, chilled white wine for the full southern Italian experience.

❄️ Storage & Reheating

Fridge: Store any leftover mussels in an airtight container in the refrigerator for up to 1 day. It's best to remove the mussels from their shells before storing to save space.

Reheating: Reheat gently in a covered pan with a splash of water or broth until warmed through. Avoid boiling, as the mussels can turn rubbery.

Freezer: Not recommended, as mussels lose their tender texture once frozen and thawed.

Ingredients
 
 

  • 2 lbs Fresh Mussels, scrubbed and debearded
  • 2 tablespoon Extra Virgin Olive Oil
  • 2 cloves Garlic, lightly crushed orthinly sliced
  • ½ cup Dry White Wine, (optional)
  • 1 teaspoon Freshly Ground Black Pepper, or more, to taste
  • 1 Lemon, cut into wedges
  • Salt, only if necessary (taste the broth first, as mussels release natural saltiness)
  • Parsley

Method
 

  1. Place the mussels in a large bowl with cold, lightly salted water for about 20-30 minutes to expel any sand or grit. Drain and rinse well.
  2. In a large, wide pan or pot, heat the olive oil over medium heat and add the garlic cloves and freshly ground pepper. Cook for about 1 minute until fragrant, being careful not to burn.
  3. Add the mussels to the pan along with the white wine (if using). Cover with a lid and cook for 5-7 minutes, shaking the pan occasionally, until all the mussels have opened.
  4. Remove from the heat and discard any mussels that did not open. Sprinkle generously with fresh parsley.
  5. Transfer the mussels to serving bowls, pour over the cooking juices, and serve with lemon wedges and crusty bread.

Notes
