Ingredients
 
 

  • 1 French Baguette, sliced into 20 thin diagonal pieces
  • 2-3 tablespoon Extra Virgin Olive Oil, for brushing
  • 5 oz Goat Cheese, softened to room temperature
  • 1 pint Cherry Tomatoes
  • Balsamic Glaze
  • Fresh Basil leaves, for garnish (optional)

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Arrange baguette slices in a single layer on the baking sheet. Brush the tops lightly with olive oil.
  3. Toast in the oven for 8-10 minutes, flipping halfway through, until golden and crisp. Remove and let cool slightly.
  4. Spread goat cheese on each toasted baguette slice. Use the back of a spoon or a butter knife for even spreading.
  5. Half or quarter the tomatoes, season lightly with salt and top the crostini, using a spoon to gently place them over the cheese.
  6. Garnish with fresh finely chopped basil leaves and a drizzle of balsamic glaze before serving.
  7. Serve immediately at room temperature or slightly warm.
