Italian hot chocolate (Cioccolata Calda) is unlike the watery versions often found elsewhere. This indulgent drink is so thick that it's often eaten with a spoon!

Its secret lies in high-quality chocolate, whole milk, and a touch of cornstarch, which creates its pudding-like consistency. Whether you're curled up with a book, hosting guests, or simply treating yourself, this thick and creamy hot chocolate is guaranteed to impress.

🧾 Ingredients

  • Whole Milk: The base for that creamy texture. Whole milk works best, but you can use plant-based alternatives like almond or oat milk for a dairy-free option.
  • Dark Chocolate: Opt for high-quality dark chocolate with at least 70% cocoa for the best flavor. You can substitute it with semi-sweet chocolate if you prefer a milder taste.
  • Sugar: Adjust the sweetness to your preference. White granulated sugar works well, but you can use coconut sugar for a caramel-like flavor.
  • Cornstarch: The key ingredient for that luscious, thick consistency. Arrowroot powder or potato starch can be used as substitutes.
  • Cocoa Powder: Enhances the chocolatey flavor. Use Dutch processed unsweetened cocoa powder for a rich, authentic taste.

See the recipe card for quantities.

🍳 Substitutions

  • Milk: Replace whole milk with almond, oat, or soy milk for a dairy-free version. Coconut milk can also work, but it will add a subtle tropical flavor.
  • Chocolate: Swap dark chocolate with milk chocolate for a sweeter version or use dairy-free chocolate for vegan hot chocolate.
  • Sweetener: Use honey, maple syrup, or stevia as natural sweetener alternatives.
  • Thickener: Arrowroot powder or potato starch can be used instead of cornstarch, though you may need to adjust the amount.

🥣 Variations

  • Spiced Hot Chocolate: Add a pinch of cinnamon, nutmeg, or cayenne pepper for a festive or spicy twist. Check the spice mix from my Spiced Cocoa Protein Shake.
  • Orange-Flavored Hot Chocolate: Stir in a splash of orange zest or orange extract to create a zesty version.
  • Peppermint Hot Chocolate: Add a few drops of peppermint extract for a holiday-inspired treat.
  • Liqueur-Infused Hot Chocolate: Stir in a splash of Baileys, Kahlúa, or Amaretto for an adult-only indulgence.
  • Vegan Italian Hot Chocolate: Use plant-based milk, dairy-free chocolate, and coconut sugar for a completely vegan recipe.

📋 Instructions with Photos

Step 1. Whisk the dry ingredients to remove clumps, then add all the ingredients in a saucepan.

🍽 Serving Suggestions

Serve your thick Italian hot chocolate in small cups with a dollop of whipped cream or a sprinkle of chocolate shavings for a touch of elegance. It pairs beautifully with biscotti, sugar cookies, pignoli cookies, or even fresh fruit like strawberries for dipping. Perfect for dessert or a luxurious afternoon treat!

❄️ Storage

You can make the base with dark chocolate chips, cocoa, sugar, and cornstarch in large quantities (use the toggle in the recipe card to multiply it) and store it in a jar. It's a perfect edible gift for Christmas or a perfect treat on cold, snowy days. For ½ cup + 1 tablespoon of milk, you'd use about 5 tablespoons of the cocoa mix.

💭 Recipe FAQs

Why is my hot chocolate not thick enough?

Ensure you've added enough cornstarch and whisked it thoroughly before heating the milk. If it's still thin, let it cook for an extra minute or two to thicken. The longer it simmers, the thicker it will be.

Can I use milk chocolate instead of dark chocolate?

Absolutely! Milk chocolate will create a sweeter and less intense version, perfect for kids or those who prefer a milder flavor. Reduce the amount of sugar or omit it completely to balance the sweetness.

Is this recipe gluten-free?

Yes, this recipe is naturally gluten-free as long as the chocolate and cornstarch you use are certified gluten-free.

⭐ Top tip

For the creamiest, smoothest Italian hot chocolate, don't rush the cooking process. Heat the mixture slowly over low to medium heat while whisking constantly. This ensures the chocolate melts evenly, and the cornstarch fully activates to create that signature thickness.

With its rich, velvety texture and indulgent flavor, Italian hot chocolate is a treat that warms the soul. Whether you're cozying up on a chilly evening or serving it as a dessert, this recipe is sure to impress. Give it a try, and let us know how you customize yours!
