Ingredients
 
 

  • ½ lb Italian Sausage, mild or spicy
  • 1 can Cannellini Beans, 7 oz each, drained and rinsed
  • 2 cups Kale, chopped
  • 1 medium Potatoes, diced
  • 1 cup Small Pasta, ditalini or elbow
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Chicken Broth
  • ⅓ cup Heavy Cream
  • ½ teaspoon Italian Seasoning
  • ¼ teaspoon Red Pepper Flakes, optional
  • Salt and Pepper, to taste
  • ½ tablespoon Olive Oil

Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add diced onion and garlic to the pot. Cook for 2-3 minutes until softened and fragrant.
  3. Add Italian sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through. Remove excess grease if necessary.
  4. Add chicken broth and bring to a boil. Stir in diced potatoes, Italian seasoning, red pepper flakes, salt, and pepper. Reduce heat and let simmer for about 10-12 minutes, or until potatoes are tender.
  5. Stir in pasta and cannellini beans. Simmer for another 8-10 minutes until pasta is cooked through.
  6. Stir in chopped kale and cook for an additional 2-3 minutes until wilted. Then add the heavy cream.
  7. Taste and adjust salt and pepper as needed.
