🧾 Ingredients

  • Chicken Drumsticks - Affordable, juicy, and perfect for baking. Pat them dry before marinating for better crispiness.
  • Olive Oil - Helps the seasoning stick and keeps the chicken moist.
  • Salt & Black Pepper - Essential for seasoning the meat evenly.
  • Paprika - Adds warmth, color, and mild smoky flavor.
  • Garlic Powder & Onion Powder - Give depth and savory flavor without burning in the oven.
  • Dried Thyme - Brings a subtle herby aroma that pairs beautifully with chicken.
  • Panko Breadcrumbs - Lighter and crunchier than regular breadcrumbs, perfect for a crispy topping.

See the recipe card for quantities.

🍳 Substitutions

  • Panko → Use regular breadcrumbs or crushed cornflakes for crunch.
  • Paprika → Smoked paprika or sweet chili powder both work well.
  • Thyme → Swap with oregano, rosemary, or Italian seasoning.
  • Chicken Drumsticks → Chicken thighs or wings can be used (adjust cooking time).

🥣 Variations

  • Spicy Drumsticks - Add chili flakes or cayenne pepper to the marinade.
  • Parmesan Crusted - Mix grated Parmesan into the panko for extra flavor.
  • Lemon Herb Chicken - Add lemon zest to the marinade for freshness.
  • Garlic Lover's Version - Add a pinch of garlic granules to the breadcrumbs.

🍽 Serving Suggestions

Serve these crispy drumsticks with roasted potatoes, a green salad, or steamed vegetables for a complete meal. They're also great with coleslaw, corn on the cob, or a simple yogurt or mustard dipping sauce. Leftovers are perfect for lunch the next day.

❄️ Storage & Reheating

Fridge: Store leftovers in an airtight container for up to 3 days.

Reheating: Reheat in the oven or air fryer at 375°F (190°C) for 8-10 minutes to restore crispiness. Avoid microwaving if possible.

Freezer: You can freeze the baked drumsticks for up to 2 months. Thaw overnight and reheat in the oven until hot and crispy.

💭 Recipe FAQs

Can I skip the breadcrumbs?

Yes, but the chicken won't be as crispy. Panko really helps create that crunchy crust.

Can I use skinless drumsticks?

Yes, but the texture will be slightly less crispy and less juicy.

Can I make this in advance?

You can marinate the chicken up to 24 hours ahead, then add breadcrumbs just before baking.

⭐ Top tip

Pat the chicken dry before marinating and use a hot oven. Removing excess moisture and baking at a high temperature helps the breadcrumbs turn golden and crispy instead of soggy.
